Ingredients
For the Wings
2 pounds Chicken wings Choose fresh, medium-sized wings for the best balance of meat and crispiness.
1 tablespoon Baking powder
1 teaspoon Salt
1 teaspoon Black pepper
For the Marinade
1 tablespoon Olive oil
1 teaspoon Garlic powder
1 teaspoon Smoked paprika
1 teaspoon Onion powder
1/2 teaspoon Cayenne pepper Optional
Directions
Pat chicken wings completely dry, then toss with baking powder, salt, and pepper until evenly coated.
Whisk olive oil, garlic powder, smoked paprika, onion powder, and optional cayenne pepper in a bowl. Add wings and toss until fully coated.
Let wings rest for 30 minutes for flavor infusion.
Preheat grill to medium-high (around 400°F).
Place wings skin-side down on the grill; cook for 20–25 minutes, turning every 5 minutes.
Cook until skin is dark golden-brown and juices run clear at 165°F.
Transfer wings to a platter and let rest for 5 minutes before serving.
